I am very excited to announce this collaboration with the sweet and talented Chef Joanna from shapeupfridge.com who includes many vegan recipes on her website. She contacted me to see if we can work on something for our audiences, so we came up with the idea of an easy, vegan banana pancake recipe. It's so easy to re-create that pretty much anyone can do it. Also, you can store the batter in the fridge or freezer to toast for another day. It can even be made gluten-free by just replacing the flour with a gluten-free one (e.g. spelt flour).

Vegan Banana Oat Pancakes

Makes 12-15 pancakes

Ingredients (metric measurements included)

  • 1 medium ripe banana, mashed

  • 1 1/2 Tbsp. (or 15g) olive oil

  • 1 1/2 Tbsp. (or 15g) maple syrup

  • 2 tsp. (or 8g) baking powder

  • 1/4 tsp. (or a pinch of) sea salt

  • 1-1 1/4 cup (or 240-300ml) non-dairy milk

  • 3/4 cup (or 96g) oat flour (can grind your own)

  • 3/4 cup (or 96g) flour (or gluten-free flour)

  • 1/4 cup (or 32g) almond flour

To determine the environmental impacts of certain materials, the most common tool that is used is the Higg MSI Materials Sustainability Index. It measures different categories of environmental impact with their points system. For each category, points are added, giving the total environmental impact per material as seen below. As you can see, the production of cow leather has a greater impact than synthetic leather by almost 500% in just global warming alone (orange) and by about 46% in total.

So I spent last weekend almost all over the German parts of Switzerland. Hashtag: Tour de Suisse! The weather was to die for and I had a really great time catching up with some close friends!

The first stop was in Lucerne. A separate post will follow soon but here is one of many pictures in front of a gorgeous tree in front of the Seehotel Hermitage. My friend and I couldn't stop obsessing over that tree! 😌

After that day trip I went to visit another friend (one of my best friends from high school) in canton Aarau. She and her mom went over and beyond when it came to providing vegan food for me. I actually cried when I heard how much preparation was made for my overnight visit. I know how much work goes into welcoming guests into your home, especially when they have different food choices than you. So I'm always very thankful when it comes to providing food for us vegan guests.
